Stay tuned for all that! I did want to quickly share with you my most recent delivery service. I don’t know about you, but coming home to a package on my door step never gets old for me. And while it’s usually clothes or home decorating items, this time it is…. FOOD. I’ve been wanting to try Hello Fresh for a long time, but could never pull the trigger to order it. Finally a girlfriend persuaded me to at least try based on how much she loves it. Hi Kerry! 🙂 Three perfectly packaged meals that I selected came right to my doorstep awaiting for me to dive into the kitchen and cook. I do love this because after a long day at work, its one less thing I have to worry about what I’m cooking for dinner and if I have all the ingredients. Today, I’m sharing with you the Pineapple Chicken Tacos I made. They were so delicious!

I was very curious as to how it would all come packaged, especially with needing to keep the meat cold. I was very pleased to see all the products sitting on a block of ice and fully wrapped in this insulated wrapping.
Everything you need for this recipe (minus Salt, Pepper & Olive Oil) comes right in a little box all ready to be prepped. The box comes with a sheet for each recipe you’ve selected for the week. The front side is how the food will look and on the back side is a complete step by step recipe for the cooking portion. So Easy! And I love that you can keep each of the recipes and recreate again on your own.

I could honestly eat a bowl of this pineapple salsa. It was absolutely delicious and I’ll definitely be making in the warmer months for a appetizer with some chips.
Ok, I spared you from seeing raw chicken or it being cooked, because lets be serious that isn’t that pretty. I simply diced up the chicken, mixed it with the pre packaged seasoning and cooked it. Then I threw in the peppers and onions and cooked those down.
After the chicken, peppers and onions were cooked I just made a little assembly station for the tacos to be made. I did these meals for two people, so each person could have 3 tacos and we had some food left over! They do offer Family Plans as well for 2 meals/per week for 4 people. My kids are super picky, so I usually always have to make them something separate which I did here as well.
I served these up with some fresh margaritas and they were so delicious. Who doesn’t love margarita’s and tacos together?!
